Preparation
-
1.In a mixing bowl, combine the whole wheat flour and water. Knead the dough until it becomes smooth and pliable. Cover it with a damp cloth and let it rest for 30 minutes.
-
2.In a separate bowl, mix together the mashed potatoes, chopped onion, green chilies, ginger-garlic paste, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Adjust the seasoning according to your taste.
-
3.Divide the dough into equal-sized balls. Take one ball and roll it into a small circle. Place a spoonful of the potato filling in the center of the circle.
-
4.Bring the edges of the dough together to seal the filling and form a ball. Flatten the ball with your hands and dust it with flour.
-
5.Roll out the flattened ball into a circular shape, approximately 6-7 inches in diameter.
-
6.Heat a griddle or a non-stick pan over medium heat. Place the rolled paratha on the hot griddle and cook for about 1-2 minutes on each side, or until golden brown spots appear.
-
7.Brush the cooked paratha with ghee or oil and repeat the process with the remaining dough and filling.
-
8.Serve the Homestyle Stuffed Paratha hot with yogurt, pickle, or chutney.
Treat your ingredients with care...
- Potatoes — Make sure to boil the potatoes until they are soft and easily mashable. This will ensure a smooth and creamy filling.
- Whole wheat flour — Use fresh and good quality whole wheat flour for the best results. If the dough feels dry, add a little more water. If it feels sticky, add a sprinkle of flour.
Tips & Tricks
- To make the parathas extra flaky, brush them with ghee or oil while cooking and press them gently with a spatula.
- Experiment with different fillings such as paneer (Indian cottage cheese), spinach, or cauliflower for variety.
- If you prefer a spicier paratha, increase the amount of green chilies or add a pinch of garam masala to the filling.
- Serve the parathas immediately after cooking to enjoy them at their best.
