Preparation

    Rinse the lentils and split chickpeas under cold water until the water runs clear.

    In a large pot, combine the lentils, split chickpeas, and water. Bring to a boil over medium heat, then reduce the heat to low and simmer for 20-25 minutes or until the lentils are soft and cooked through.

    In a separate pan, heat the ghee over medium heat. Add the cumin seeds and mustard seeds and let them splutter.

    Add the chopped onions and sauté until golden brown.

    Stir in the minced garlic, grated ginger, and slit green chilies. Cook for another 2 minutes.

    Add the chopped tomatoes and cook until they turn mushy.
