Treat your ingredients with care...
- Shrimp — Be careful not to overcook the shrimp as they can become rubbery. Cook them just until they turn pink and opaque.
- Mussels — Discard any mussels that do not open after cooking, as they may be unsafe to eat.
- Coconut milk — Shake the can of coconut milk well before using to ensure the cream and liquid are well combined.
Tips & Tricks
- Adjust the spice level by adding more or less chili powder according to your preference.
- For a thicker stew, you can add a slurry of cornstarch and water towards the end of cooking.
- Serve the stew with a squeeze of fresh lime juice for an extra burst of tanginess.
- Feel free to customize the seafood selection based on your preferences and availability.
- Leftovers can be refrigerated and enjoyed the next day, allowing the flavors to meld even further.
