Preparation

1.Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the flour and salt. Gradually add the warm water and vegetable oil, mixing until a dough forms.

3.Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. Cover with a damp cloth and let it rest for 10 minutes.

4.In separate bowls, prepare the fillings. For the bacon and cheese filling, mix together the sour cream, cream cheese, cooked bacon, and shredded cheddar cheese. For the buffalo chicken filling, combine the cooked and shredded chicken with the buffalo sauce. For the spinach and feta filling, mix together the chopped spinach and crumbled feta cheese.

5.Roll out the dough on a floured surface to a thickness of about 1/8 inch. Use a round cookie cutter or a glass to cut out circles from the dough.

6.Spoon a small amount of filling onto each dough circle, making sure not to overfill. Fold the dough over the filling and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

7.Place the filled pierogi on the prepared baking sheet and brush them with a little oil. Bake for 15-20 minutes, or until golden brown and crispy.
