Preparation
-
1.Preheat the oven to 200°C (400°F).
-
2.Wash the potatoes thoroughly and prick them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.
-
3.In the meantime, heat the olive oil in a skillet over medium heat. Add the chopped onion and diced bacon, and cook until the bacon is crispy and the onion is golden brown.
-
4.Add the minced garlic, dried thyme, dried rosemary, salt, and pepper to the skillet. Cook for an additional 2 minutes, stirring occasionally.
-
5.Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut off the top third of each potato and carefully scoop out the flesh, leaving a thin layer of potato on the skin.
-
6.Mash the scooped-out potato flesh and combine it with the cooked onion and bacon mixture. Mix well to incorporate all the flavors.
-
7.Stuff each potato skin with the filling mixture and top with grated Lyonnaise cheese.
-
8.Place the stuffed potatoes back on the baking sheet and bake for another 10-15 minutes, or until the cheese is melted and golden.
-
9.Garnish with fresh parsley and serve hot.
