While the original Qapchi is a Peruvian dish made with cheese and aji amarillo peppers, this adapted Nauruan version replaces the cheese with coconut to cater to the tropical flavors of the target cuisine. 1.In a large mixing bowl, combine the grated coconut, diced cucumber, red and yellow bell peppers, tomatoes, red onion, and green chili.
