Preparation

1.In a small bowl, mix tamarind paste with 2 tablespoons of warm water. Set aside.

2.In a blender or food processor, combine roasted peanuts, garlic, red chili peppers, palm sugar, fish sauce (if using), lime juice, and tamarind mixture. Blend until smooth.

3.In a large mixing bowl, combine mango, pineapple, cucumber, jicama, and grilled shrimp or tofu.

4.Pour the peanut sauce over the fruits, vegetables, and protein. Toss gently to coat evenly.
