In a large mixing bowl, combine the rye flour, all-purpose flour, salt, sugar, yeast, ground ginger, ground cloves, and chili powder.
  2. 2.
Gradually add warm water and vegetable oil to the dry ingredients. Mix well until a sticky dough forms.
  3. 3.
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  5. 5.
Preheat the oven to 200°C (400°F).
  6. 6.
Punch down the risen dough and shape it into a loaf. Place the loaf on a baking sheet lined with parchment paper.

Bake the bread in the preheated oven for 30-35 minutes or until the crust is golden brown and the bread sounds hollow when tapped on the bottom.
  9. 9.
Remove from the oven and let it cool on a wire rack before slicing.

Treat your ingredients with care...

  • Rye flour — Rye flour has a lower gluten content compared to wheat flour, resulting in a denser texture. It is important to knead the dough thoroughly to develop the gluten and achieve a lighter bread.
  • Ground ginger — Adjust the amount of ground ginger according to your preference for spiciness. You can also add freshly grated ginger for a stronger flavor.
  • Chili powder — Feel free to adjust the amount of chili powder based on your desired level of heat. Add more or less depending on your taste preferences.

Tips & Tricks

  • For a more intense flavor, toast the rye flour in a dry skillet over medium heat for a few minutes before using it in the recipe.
  • Experiment with different Guinean spices like cinnamon or nutmeg to add additional layers of flavor to the bread.
  • Serve the bread warm with a spread of butter or alongside traditional Guinean dishes for a complete culinary experience.
  • If you prefer a softer crust, brush the loaf with melted butter immediately after removing it from the oven.
  • Store the bread in an airtight container to maintain its freshness for longer.
