Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the lamb chunks and cook until browned on all sides. Remove the lamb from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the diced tomatoes, sliced bell peppers, and sliced carrots to the pot. Cook for a few minutes until the vegetables start to soften.

4.Stir in the tomato paste, ground cumin, ground coriander, ground turmeric, black pepper, and salt. Cook for another minute to allow the spices to release their flavors.

5.Return the browned lamb to the pot and pour in the beef or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the lamb is tender.
