1.In a large mixing bowl, combine the grated fresh coconut, granulated sugar, ground cinnamon, ground nutmeg, ground ginger, ground allspice, vanilla extract, and coconut milk.

3.Transfer the mixture to a non-stick pan and cook over medium heat, stirring continuously.

4.Cook until the mixture thickens and starts to come away from the sides of the pan, forming a soft dough-like consistency.

5.Remove the pan from heat and let the mixture cool slightly.

6.Once cooled, take small portions of the mixture and shape them into small round or oval-shaped sandesh.

7.Garnish each sandesh with grated coconut.

8.Refrigerate for at least 1 hour before serving to allow the sandesh to firm up.
