Preparation

  1. 1.
In a large bowl, combine the minced beef, minced lamb, garlic, ginger, ground coriander, ground cumin, turmeric powder, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. 2.
Take a handful of the meat mixture and wrap it tightly around a lemongrass stalk, forming a cylindrical shape. Repeat with the remaining meat and lemongrass stalks.
  3. 3.
Preheat your grill or barbecue to medium-high heat.
  4. 4.
In a saucepan, combine the ground peanuts, coconut milk, sweet soy sauce, tamarind paste, palm sugar, and chopped red chilies. Cook over low heat, stirring constantly, until the sauce thickens and the flavors meld together. Remove from heat and set aside.
  5. 5.
Thread the meat-wrapped lemongrass sticks onto the soaked bamboo skewers.
  6. 6.
Grill the sate buntel skewers for about 10-12 minutes, turning occasionally, until the meat is cooked through and slightly charred.
  7. 7.
Serve the sate buntel hot with the peanut sauce on the side. Enjoy!

Treat your ingredients with care...

  • Lemongrass — Pound the lemongrass stalks gently with a rolling pin or the back of a knife to release their aroma before using them as skewers.
  • Tamarind paste — If you can't find tamarind paste, you can substitute it with lime juice for a tangy flavor.

Tips & Tricks

  • Soaking the bamboo skewers in water before grilling will prevent them from burning.
  • For a spicier peanut sauce, add more chopped red chilies or a dash of chili powder.
  • If you prefer a smoother peanut sauce, you can blend the ground peanuts with the coconut milk before cooking.

Serving advice

Serve the sate buntel with steamed rice, cucumber slices, and shallot slices. Drizzle the peanut sauce generously over the skewers and rice for a complete and satisfying meal.

Presentation advice

Arrange the sate buntel skewers on a platter, garnish with fresh cilantro leaves, and serve the peanut sauce in a small bowl on the side. The vibrant colors and enticing aroma will make this dish even more appealing.
