Preparation

1.In a bowl, combine soy sauce, minced garlic, grated ginger, and palm sugar. Add the chicken pieces and marinate for at least 1 hour in the refrigerator.

2.In a blender or food processor, blend roasted peanuts, red chili peppers, garlic, and tamarind paste until finely ground.

3.In a saucepan, heat the coconut milk over medium heat. Add the peanut mixture and stir well. Cook for 5 minutes, stirring occasionally.

4.Remove the sauce from heat and stir in lime juice. Set aside.
