Preparation

1.In a large pot, combine the soaked chana dal with 2 cups of water. Cook over medium heat until the lentils are tender and most of the water has evaporated. Remove from heat and let it cool.

2.In a mixing bowl, combine the cooked chana dal, ground meat, chopped onion, minced garlic, grated ginger, green chilies, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, salt, and fresh coriander leaves. Mix well until all the ingredients are evenly combined.

3.Take a small portion of the mixture and shape it into a flat patty. Repeat with the remaining mixture.

4.Heat oil in a frying pan over medium heat. Shallow fry the kebabs in batches until they are golden brown on both sides.

5.Remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.

6.Serve the Shami Kebabs hot with mint chutney or yogurt sauce.
