Preparation

1.Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

2.Add the ground cumin, ground coriander, ground turmeric, and saffron threads to the pot. Stir well to coat the onions and garlic with the spices.

3.Add the shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes. Remove a few shrimp and set them aside for garnish.

4.Pour in the fish or vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld together.

5.Using an immersion blender or a regular blender, puree the soup until smooth and creamy.

6.Return the bisque to the pot and stir in the heavy cream. Season with salt and pepper to taste.

7.Simmer the bisque for an additional 5 minutes to heat through.
