Ingredients
In this Oceanic-inspired version of Smalec, we replace the traditional pork fat with a combination of coconut oil and avocado oil to infuse the dish with tropical flavors. Additionally, we incorporate Oceanic spices such as lemongrass, ginger, and turmeric to enhance the taste profile. Preparation

1.In a large saucepan, heat the coconut oil and avocado oil over medium heat.

2.Add the chopped onion, minced garlic, bruised lemongrass, and grated ginger to the saucepan. Sauté until the onion becomes translucent.

3.Stir in the turmeric powder, sea salt, black pepper, and chili flakes (if using). Cook for another minute to allow the flavors to meld together.

4.Reduce the heat to low and let the mixture simmer for about 30 minutes, stirring occasionally.

5.Remove the lemongrass stalks from the mixture and discard.

6.Using a fine-mesh strainer or cheesecloth, strain the mixture to remove any solids.

7.Allow the mixture to cool slightly before transferring it to a jar or container.

8.Refrigerate the Oceanic-inspired Smalec for at least 2 hours, or until it solidifies.

9.Once chilled and solid, garnish with fresh herbs and serve with pickles and crusty bread or crackers.
