Preparation

1.In a mixing bowl, combine the flour, melted butter, warm water, salt, and granulated sugar. Mix until a soft dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
-
2.In a separate bowl, mix the ground pistachios, milk, cream cheese, granulated sugar, and vanilla extract until well combined. Set aside.
-
3.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
-
4.Divide the dough into 4 equal portions. Roll out each portion into a thin rectangle.
-
5.Spread a thin layer of the pistachio filling evenly over one of the dough rectangles. Place another dough rectangle on top and repeat the process until all the dough and filling are used.
-
6.Carefully roll up the layered dough from one end to the other, creating a long spiral log. Cut the log into 2-inch pieces.
-
7.Place the Şöbiyet pieces on the prepared baking sheet and bake for 25-30 minutes, or until golden brown.
-
8.While the Şöbiyet is baking, prepare the syrup by combining water, granulated sugar, and lemon juice in a small saucepan. Bring to a boil and simmer for 5 minutes. Remove from heat and let it cool.
-
9.Once the Şöbiyet is baked, remove from the oven and let it cool slightly. Drizzle the cooled syrup over the warm Şöbiyet.
-
10.Dust the Şöbiyet with powdered sugar before serving. Enjoy!
Treat your ingredients with care...
- Pistachios — Make sure to use ground pistachios for the filling. You can grind them in a food processor or use pre-ground pistachios.
- Cream cheese — Soften the cream cheese at room temperature before mixing it with the other filling ingredients for a smooth and creamy texture.
- Dough — When rolling out the dough, dust the surface and rolling pin with flour to prevent sticking.
- Syrup — Allow the syrup to cool before drizzling it over the warm Şöbiyet to prevent the pastry from becoming soggy.
- Garnish — Dust the powdered sugar over the Şöbiyet just before serving to maintain its visual appeal.
Tips & Tricks
- For a richer flavor, you can add a pinch of ground cinnamon or cardamom to the pistachio filling.
- If you prefer a sweeter Şöbiyet, you can increase the amount of granulated sugar in the filling.
- To save time, you can use store-bought phyllo dough instead of making the dough from scratch.
- Serve Şöbiyet warm or at room temperature for the best texture and flavor.
- Store any leftovers in an airtight container at room temperature for up to 3 days.
Serving advice
Serve Şöbiyet as a delightful dessert after a Turkish-inspired meal. Pair it with a cup of Turkish tea or coffee for an authentic experience. For an extra touch of indulgence, serve it with a dollop of whipped cream or a scoop of vanilla ice cream.
Presentation advice
Arrange the Şöbiyet pieces on a platter, allowing the beautiful spiral pattern to be visible. Dust them generously with powdered sugar for an elegant and inviting presentation. Consider garnishing the platter with a few whole pistachios for an added visual appeal.
