1.In a large pot, bring the chicken broth to a boil. Add the chicken pieces and simmer for 30 minutes until cooked through. Remove the chicken from the broth and set aside to cool. Once cooled, shred the chicken into bite-sized pieces.

2.In a mortar and pestle, grind the garlic, shallots, lemongrass, galangal, turmeric, coriander powder, and cumin powder into a paste.

3.Heat a tablespoon of oil in a separate pot over medium heat. Add the spice paste and sauté until fragrant.

4.Add the shredded chicken, kaffir lime leaves, salt, and sugar to the pot. Stir well to combine.

5.Pour in the chicken broth and bring to a simmer. Let it cook for another 15 minutes to allow the flavors to meld together.

6.To serve, divide the cooked rice noodles and bean sprouts among serving bowls. Ladle the hot soup over the noodles and garnish with fried shallots. Serve with lime wedges, sambal, and sweet soy sauce on the side.
