Preparation

1.Preheat the oven to 180°C (350°F).

2.In a pan, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

3.Add the cumin, paprika, and dried mint to the pan, and cook for another minute.

4.Remove the pan from heat and let the mixture cool.

5.In a bowl, combine the crumbled feta cheese, chopped spinach, parsley, and the cooled onion mixture. Season with salt and pepper to taste.

6.Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and repeat the process until you have six layers.

7.Cut the layered phyllo dough into three equal strips.

8.Place a spoonful of the filling at the bottom of each strip, leaving a small border.

9.Fold the sides of the strip over the filling and roll it up tightly.

10.Repeat the process with the remaining phyllo dough and filling.
