Preparation

1.Soak the salted cod in cold water overnight, changing the water several times to remove excess salt. Drain and rinse the cod before using.

2.In a large pot, heat the olive oil over medium heat. Add the diced onion and sliced bell peppers, and sauté until softened.

3.Add the diced tomatoes, minced garlic, minced scotch bonnet pepper, thyme leaves, and bay leaf to the pot. Cook for a few minutes until the tomatoes start to break down.

4.Add the desalted cod to the pot and pour in the vegetable broth and coconut milk. Bring the mixture to a simmer.

5.Reduce the heat to low and let the stew simmer for about 30 minutes, or until the cod is tender and flakes easily.

6.Season with salt and pepper to taste. Remove the bay leaf before serving.
