Preparation

  1. 1.
In a large mixing bowl, combine the all-purpose flour and salt for the dough. Gradually add water and knead until a smooth dough is formed. Cover and let it rest for 30 minutes.
  2. 2.
Heat oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
  3. 3.
Add the ginger-garlic paste and green chilies to the pan. Sauté for a minute.

Add the turmeric powder, cumin powder, coriander powder, and salt. Mix well.

Add the mashed potatoes to the pan and mix until the spices are evenly incorporated. Cook for 2-3 minutes. Remove from heat and let the stuffing cool.
  6. 6.
Divide the dough into two equal portions. Roll out each portion into a thin rectangular sheet.
  7. 7.
Spread the potato stuffing evenly over one of the dough sheets, leaving a small border around the edges.
  8. 8.
Carefully roll the dough sheet with the stuffing, starting from one end, to form a log.

Treat your ingredients with care...

  • Potatoes — Make sure to boil the potatoes until they are soft and easily mashable. This will ensure a smooth and creamy texture for the stuffing.
  • Banana leaves — If using banana leaves for lining, briefly heat them over a flame to make them pliable and prevent tearing.

Tips & Tricks

  • For added flavor, you can temper the stuffing with mustard seeds, curry leaves, and asafoetida before adding the onions.
  • Experiment with different fillings such as paneer (Indian cottage cheese), mixed vegetables, or minced meat for a variation in flavors.
  • Serve the Maharashtrian Style Stuffed Štruklji with a side of coconut chutney or tomato chutney for a delightful combination of tastes.
  • If you don't have banana leaves or parchment paper, you can also use aluminum foil to line the steamer basket.
