Ingredients
In this Maharashtrian adaptation of Kumamoto ramen, the traditional Japanese flavors are infused with the bold and spicy elements of Maharashtrian cuisine. The use of Maharashtrian spices and garnishes like tamarind, cilantro, and lime further enhances the fusion of flavors. We alse have the original recipe for Kumamoto ramen, so you can check it out.

Treat your ingredients with care...
- Sprouted lentils — If you can't find sprouted lentils, you can sprout them at home by soaking whole lentils overnight and then draining and rinsing them every few hours until sprouts appear.
- Misal masala — If you don't have access to misal masala, you can make your own by combining equal parts of red chili powder, coriander powder, cumin powder, and garam masala.
Tips & Tricks
- Adjust the spice level according to your preference by increasing or decreasing the amount of red chili powder and misal masala.
- For an extra kick of flavor, add a spoonful of garlic chutney or green chili paste to the misal gravy.
- Customize the toppings by adding chopped onions, diced tomatoes, or grated coconut for added texture and freshness.
- If you prefer a thicker gravy, you can blend a portion of the cooked lentils before adding them to the misal gravy.
- To make it more filling, you can add boiled potatoes or cooked chickpeas to the misal gravy.
Serving advice
