1.In a large mixing bowl, combine the flour, powdered sugar, and salt for the crust. Add the cold cubed butter and use your fingertips to rub it into the flour mixture until it resembles coarse crumbs.

2.In a small bowl, whisk together the egg yolk and cold water. Pour the egg mixture into the flour mixture and gently knead until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

3.In a saucepan, combine the chopped pineapple, granulated sugar, and lemon juice for the filling. Cook over medium heat, stirring occasionally, until the mixture thickens and most of the liquid has evaporated. Remove from heat and let it cool completely.

4.Preheat the oven to 180°C (350°F). Take the chilled dough out of the refrigerator and divide it into equal portions. Roll each portion into a small disc.
