Preparation

1.Heat vegetable oil in a pan over medium heat.

2.Add mustard seeds and cumin seeds. Let them splutter.

3.Add grated ginger and minced garlic. Sauté for a minute.

4.Add chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well.

5.Cook the tomatoes on low heat until they soften and release their juices, stirring occasionally. This will take about 15-20 minutes.

6.Add jaggery or brown sugar and mix well. Cook for another 5 minutes.

7.Remove from heat and let the chutney cool down.

8.Transfer the chutney to a blender or food processor and blend until desired consistency is achieved.
