-
3.Heat olive oil in a frying pan over medium heat.
-
4.Take a small portion of the mixture and shape it into a small patty. Repeat with the remaining mixture.
-
5.Carefully place the patties into the hot oil and fry until golden brown on both sides, approximately 3-4 minutes per side.
-
6.Remove the fritters from the pan and place them on a paper towel-lined plate to absorb any excess oil.
-
7.Serve the Tomatokeftedes hot as an appetizer or a light main course. They can be enjoyed on their own or with a side of tzatziki sauce.
Treat your ingredients with care...
- Tomatoes — Use ripe tomatoes for the best flavor and juiciness. Grate them using a box grater or a food processor.
- Feta cheese — Opt for a good quality feta cheese for its creamy and tangy taste. Crumble it into small pieces for even distribution in the fritters.
Tips & Tricks
- Squeeze out any excess moisture from the grated tomatoes before adding them to the mixture to prevent the fritters from becoming too watery.
- If the mixture feels too wet, add a little more breadcrumbs to bind it together.
- For an extra kick of flavor, add a pinch of chili flakes to the mixture.
- Serve the Tomatokeftedes with a dollop of tzatziki sauce and a squeeze of lemon juice for a refreshing twist.
