Preparation

  1. 1.
Drain and rinse the soaked black beans. In a large pot, add the beans and enough water to cover them. Bring to a boil, then reduce the heat and simmer until the beans are tender, about 1 to 1.5 hours.
  2. 2.
In a separate pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  3. 3.
Add the carrot, bell pepper, and tomato to the pan. Cook until the vegetables are softened.
  4. 4.
Stir in the tomato paste, cumin, and smoked paprika. Cook for an additional 2 minutes.
  5. 5.
Transfer the cooked black beans to a blender or food processor, and blend until smooth.
  6. 6.
Return the bean puree to the pot with the sautéed vegetables. Stir in the cassava flour and cook over low heat, stirring constantly, until the mixture thickens.
  7. 7.
Season with salt and pepper to taste. Simmer for another 10 minutes to allow the flavors to meld together.
  8. 8.
Serve the Tutu à Brasileira hot, garnished with chopped parsley.

Treat your ingredients with care...

  • Cassava flour — Make sure to use finely ground cassava flour for a smooth texture in the stew.

Tips & Tricks

  • For a smokier flavor, you can add a small amount of liquid smoke to the stew.
  • If you prefer a chunkier texture, you can mash the beans with a fork instead of blending them.
  • Serve Tutu à Brasileira with a side of sautéed collard greens for a traditional Brazilian meal.

Serving advice

Serve Tutu à Brasileira as a main course, accompanied by white rice and sautéed collard greens. It can also be enjoyed with a side of farofa (toasted cassava flour) for added crunch.

Presentation advice
