1.Rinse the black beans under cold water and soak them overnight.

2.Drain the soaked beans and transfer them to a large pot. Add water and bring to a boil. Reduce heat and simmer until the beans are tender, about 1 hour.

3.In a separate pan, heat vegetable oil over medium heat. Add the chopped onion, minced garlic, grated ginger, and Sichuan peppercorns. Sauté until the onions are translucent and fragrant.
