1.In a large mixing bowl, combine the minced pork, steel-cut oats, chopped onion, white pepper, nutmeg, mace, salt, ginger, coriander, and cloves. Mix well until all the ingredients are evenly incorporated.

3.Stuff the mixture into the hog casings, forming a long sausage shape. Alternatively, shape the mixture into a log and wrap tightly in plastic wrap.

4.Place the pudding in a steamer and steam for 2 hours. If using the wrapped log method, ensure it is tightly sealed to prevent water from entering.
