1.In a heatproof bowl, whisk together the egg yolks and sugar until well combined.

2.Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water.

3.Slowly pour in the orange juice, lemon juice, orange zest, and lemon zest, whisking continuously.

4.Gradually add the Marsala wine while whisking, and continue whisking until the mixture becomes thick and creamy. This should take about 10-15 minutes.

5.Remove the bowl from the heat and let it cool slightly.

6.Divide the Zabaione into serving glasses or bowls and refrigerate for at least 2 hours, or until chilled and set.
