1.In a heatproof bowl, whisk together the egg yolks and sugar until pale and creamy.

2.In a separate saucepan, heat the heavy cream over medium heat until it begins to simmer.

3.Slowly pour the hot cream into the egg yolk mixture, whisking continuously.

4.Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

5.In a small bowl, dissolve the gelatin in cold water according to package instructions.

6.In another saucepan, heat the milk until warm, then add the dissolved gelatin and stir until fully incorporated.

7.Remove from heat and let the milk mixture cool slightly.

8.Gently fold the milk mixture into the egg yolk mixture until well combined.

9.Allow the mixture to cool completely, then fold in the whipped cream.

10.Pour the Bavarian cream into individual serving dishes and refrigerate for at least 4 hours, or until set.
