1.In a heatproof bowl, whisk together the egg yolks and sugar until pale and creamy.

4.Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

5.In a small bowl, dissolve the gelatin in cold water according to package instructions.

6.In another saucepan, heat the milk until warm, then add the dissolved gelatin and stir until fully incorporated.
