1.In a saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar dissolves completely. Remove from heat and let it cool slightly.

2.In a separate bowl, sprinkle gelatin powder over 1/2 cup of cold water. Let it sit for 5 minutes to bloom.

3.Place the gelatin mixture over low heat and stir until the gelatin dissolves completely. Remove from heat and let it cool slightly.

4.In a large mixing bowl, beat the egg whites until stiff peaks form.

5.Gradually pour the sugar syrup into the beaten egg whites while continuing to beat on low speed.

6.Add the fruit puree and vanilla extract to the mixture and beat until well combined.

7.Slowly pour in the gelatin mixture while beating on low speed until fully incorporated.

8.Line a baking dish with parchment paper and lightly grease it with oil. Pour the Zefir mixture into the dish and smooth the top with a spatula.
