1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

2.Add the Arborio rice to the pot and stir well to coat the grains with the oil. Cook for a minute or two until the rice becomes slightly toasted.

3.Pour in the vegetable broth and water, and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15 minutes, or until the rice is cooked and tender.
