Preparation

1.In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water and vegetable oil, mixing until a soft dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

3.In a separate bowl, mix together the shredded mozzarella and cheddar cheese. Add the ground white pepper, garlic powder, onion powder, turmeric powder, and chili powder. Mix well to combine.

4.Divide the dough into 4 equal portions. Roll out each portion into a thin circle.

5.Spread a generous amount of the cheese mixture onto one side of the rolled-out dough. Fold the other side over the cheese to create a half-moon shape. Press the edges firmly to seal.

6.Heat a non-stick pan over medium heat. Brush the pan with melted butter.

7.Cook the filled roti canai on the pan for about 2-3 minutes on each side, until golden brown and crispy.

8.Repeat the process with the remaining dough and cheese mixture.
