Ingredients
In this Chifa-inspired version of Aluwa, we incorporate Chifa cuisine's unique spices and ingredients to give the traditional Sri Lankan dish a Peruvian-Chinese twist. The original Aluwa recipe is adapted to include Chifa-specific spices such as ginger, garlic, soy sauce, and Chinese five-spice powder. Preparation

1.In a large mixing bowl, combine the glutinous rice flour, grated jaggery, coconut milk, and water. Mix well until a smooth batter is formed.

2.Heat the vegetable oil in a pan over medium heat. Add the grated ginger and minced garlic, and sauté for 1-2 minutes until fragrant.

3.Add the soy sauce and Chinese five-spice powder to the pan, and stir well to combine with the ginger and garlic.

4.Pour the rice flour batter into the pan and cook over low heat, stirring continuously, until the mixture thickens and starts to pull away from the sides of the pan.

5.Remove the pan from heat and let the mixture cool slightly.

6.Grease a square baking dish with oil and transfer the cooked mixture into it. Press it down firmly to create an even layer.

7.Sprinkle the chopped peanuts and toasted sesame seeds over the top, gently pressing them into the mixture.

8.Allow the Aluwa to cool completely and set for at least 2 hours.

9.Once set, cut the Aluwa into desired shapes, such as squares or diamonds.

10.Serve and enjoy!
