Treat your ingredients with care...

  • Coconut milk — Shake the can of coconut milk well before opening to ensure the cream and liquid are well combined.
  • Ginger — Use a spoon to peel the ginger, then grate it using a fine grater for the best texture.
  • Pineapple and mango — Use fresh or frozen fruits for the best flavor. If using canned fruits, make sure to drain them well before adding to the dish.

Tips & Tricks

  • For a spicier kick, add more chili peppers or include some chili flakes.
  • Adjust the sweetness by adding more or less pineapple and mango, according to your preference.
  • If you prefer a thicker sauce, simmer the dish uncovered for a few extra minutes to reduce the liquid.
  • Feel free to substitute pork or chicken with your preferred protein, such as beef or shrimp.
  • Add a squeeze of lime juice before serving for a tangy twist.
