Preparation
-
1.Heat the olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
-
2.Add the diced tomatoes to the pan and cook for a few minutes until they start to soften.
-
3.Season the safio fish fillets with salt and pepper, then add them to the pan. Cook for about 3-4 minutes on each side until they are lightly browned.
-
4.Remove the fish from the pan and set aside.
-
5.Add the rice to the pan and stir well to coat it with the flavors from the onion, garlic, and tomatoes.
-
6.Pour in the fish or vegetable broth and bring to a boil. Reduce the heat to low, cover the pan, and let the rice simmer for about 15-20 minutes or until it is cooked and the liquid is absorbed.
-
7.While the rice is cooking, flake the safio fish into small pieces, discarding any bones.
-
8.Once the rice is cooked, gently fold in the flaked fish and chopped cilantro. Adjust the seasoning with salt and pepper if needed.
-
9.Cover the pan and let it sit for a few minutes to allow the flavors to meld together.
-
10.Serve the Arroz de Safio hot, garnished with additional cilantro if desired.
