Preparation

  1. 1.
Heat the vegetable oil in a large pan over medium heat. Add the chopped onion, minced garlic, grated ginger, and sliced red chilies. Sauté until the onions are translucent and fragrant.
  2. 2.
Add the diced tomatoes to the pan and cook until they start to soften.
  3. 3.
In a small bowl, mix together the ground coriander, cumin, and turmeric. Add this spice mixture to the pan and stir well to coat the onions, garlic, and tomatoes.
  4. 4.
Push the tomato mixture to one side of the pan and add the pork pieces. Cook until the pork is browned on all sides.
  5. 5.
Stir in the tomato paste, chicken broth, soy sauce, fish sauce, and brown sugar. Bring the mixture to a simmer and let it cook for about 30 minutes, or until the pork is tender and the flavors have melded together.
  6. 6.
Just before serving, squeeze the lime juice over the dish and season with salt and pepper to taste. Garnish with fresh cilantro.
