1.Heat the olive oil in a large pot or Dutch oven over medium heat.

2.Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

3.In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.

4.Add the ground cumin, ground coriander, ground cinnamon, paprika, ground ginger, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices.

5.Return the browned beef to the pot and pour in the beef broth, tomato sauce, and red wine vinegar. Stir to combine.

6.Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for 2 hours, or until the beef is tender.

7.Add the pitted green olives, dried apricots, raisins, and preserved lemon to the pot. Stir gently to incorporate the ingredients.
