Preparation

  1. 1.
In a bowl, combine the soy sauce, minced garlic, and grated ginger. Add the sliced beef and marinate for at least 30 minutes.
  2. 2.
Heat a pan over medium-high heat and cook the marinated beef until browned and cooked through. Set aside.
  3. 3.
Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes pliable. Place it on a clean surface.
  4. 4.
Arrange a few slices of cooked beef in the center of the rice paper. Top with julienned carrots, cucumbers, red bell pepper, mint leaves, and cilantro leaves.
  5. 5.
Fold the sides of the rice paper over the filling, then roll tightly from bottom to top, sealing the edges.
  6. 6.
Repeat steps 3-5 with the remaining ingredients.
  7. 7.
For the dipping sauce, whisk together hoisin sauce, peanut butter, lime juice, water, soy sauce, and honey until well combined.
  8. 8.
Serve the Fresh Spring Rolls with the dipping sauce on the side.

Treat your ingredients with care...

  • Beef — For a more tender result, slice the beef against the grain.
  • Rice paper wrappers — To prevent sticking, place a damp kitchen towel on your work surface while assembling the rolls.

Tips & Tricks

  • To add extra flavor, you can marinate the beef overnight in the refrigerator.
  • Customize the filling by adding other vegetables like bean sprouts or lettuce.
  • For a vegetarian version, substitute the beef with tofu or tempeh.
  • Soak the rice paper wrappers one at a time to prevent them from sticking together.
  • Serve the Fresh Spring Rolls immediately after assembling to maintain their freshness.
