Preparation

1.In a large mixing bowl, combine the flour and salt. Add the cold butter and use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.

2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

3.Preheat the oven to 180°C (350°F).

4.In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

5.Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool.

6.In a separate bowl, whisk together the eggs, heavy cream, dill, chives, salt, and pepper.

7.Roll out the chilled dough on a lightly floured surface and transfer it to a tart pan. Press the dough into the pan and trim any excess.

8.Spread the cooked spinach evenly over the crust. Sprinkle the grated cheese on top.
