Preparation

1.Rinse the navy beans under cold water and remove any debris. Place them in a large pot with water and bring to a boil. Let them boil for 2 minutes, then remove from heat and let them soak for 1 hour. Drain and rinse the beans.

2.Preheat the oven to 325°F (160°C).

3.In a Dutch oven or oven-safe pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

4.Add the chopped onion to the pot and sauté until translucent.

5.In a bowl, combine the molasses, maple syrup, ketchup, Dijon mustard, apple cider vinegar, salt, black pepper, and ground cloves. Mix well.

6.Add the drained navy beans, cooked bacon, and the molasses mixture to the pot. Stir until all the ingredients are well combined.

7.Cover the pot and transfer it to the preheated oven. Bake for 4-5 hours, or until the beans are tender and the sauce has thickened, stirring occasionally.
