Ingredients
In this adapted version, the traditional Maltese bread is transformed into a stuffed bread, inspired by American cuisine. The original recipe typically consists of a round loaf of bread filled with a mixture of tuna, onions, tomatoes, capers, olives, and olive oil. In this Americanized version, the filling is replaced with a savory blend of ground beef, onions, garlic, and Mediterranean spices, creating a heartier and more robust flavor profile. The bread is also made with a combination of all-purpose and whole wheat flour, adding a nutty undertone to the crust. Preparation
-
1.In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, and sugar.
-
2.In a separate small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
-
3.Add the yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.
-
4.Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
-
5.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
-
6.While the dough is rising, prepare the filling. In a skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is translucent.
-
7.Stir in the dried oregano, dried basil, paprika, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together. Remove from heat and set aside.

8.Preheat the oven to 375°F (190°C).
-
9.Punch down the risen dough and divide it into two equal portions.
-
10.Roll out each portion into a rectangle shape, about 1/4 inch thick.
-
11.Spread the prepared filling evenly over one of the dough rectangles, leaving a small border around the edges.
-
12.Place the second dough rectangle on top of the filling and press the edges together to seal.
-
13.Transfer the stuffed bread to a baking sheet lined with parchment paper.
-
14.Bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
-
15.Remove from the oven and let it cool for a few minutes before slicing and serving.
Treat your ingredients with care...
- Ground beef — Make sure to use lean ground beef for a healthier option. You can also substitute it with ground turkey or chicken if desired.
- Dried oregano and basil — If you prefer a more intense flavor, you can use fresh herbs instead of dried. Double the amount if using fresh herbs.
Tips & Tricks
- For added flavor, brush the top of the bread with olive oil and sprinkle some dried herbs before baking.
- Feel free to customize the filling by adding your favorite vegetables or cheeses.
- Serve the stuffed bread warm with a side of marinara sauce for dipping.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
- This recipe can be easily doubled to serve a larger crowd.
