Preparation

1.Heat vegetable oil in a large pan or wok over medium heat.

2.Add the sliced onion, minced garlic, and grated ginger. Sauté until fragrant and the onion becomes translucent.

3.Add the sliced shiitake mushrooms, button mushrooms, and oyster mushrooms. Stir-fry for 3-4 minutes until the mushrooms start to soften.

4.Add the sliced bamboo shoots, snow peas, julienned carrots, and halved baby corn. Stir-fry for another 3-4 minutes until the vegetables are slightly tender.

5.Gently add the cubed tofu and bean sprouts to the pan. Stir gently to avoid breaking the tofu.

6.In a small bowl, mix together soy sauce, vegetarian oyster sauce, hoisin sauce, and sesame oil. Pour the sauce over the vegetables and tofu. Stir well to coat everything evenly.

7.Season with salt and pepper to taste. Continue cooking for another 2-3 minutes until the flavors meld together.
