1.In a large pot, bring water and beef broth to a boil.

2.Add beef shanks, marrow bones, onion, garlic, fish sauce, black peppercorns, and bay leaves to the pot. Reduce heat to low and simmer for 2 hours, skimming off any impurities that rise to the surface.

3.Add corn and potatoes to the pot and continue simmering for another 30 minutes or until the vegetables are tender.

4.Stir in bok choy and cook for an additional 5 minutes.
