Treat your ingredients with care...

  • Tomatoes — To easily dice the tomatoes, make a small "X" shaped incision at the bottom of each tomato, then blanch them in boiling water for 30 seconds. Transfer them to an ice bath, and the skin will peel off easily.

Tips & Tricks

  • For a heartier version, you can add cooked chickpeas or white beans to the stew.
  • Feel free to adjust the spices according to your taste preferences. Add a pinch of chili flakes for a spicier kick.
  • Serve the stew with a side of crusty bread to soak up the flavorful broth.
  • Leftovers can be stored in the refrigerator for up to 3 days and taste even better the next day as the flavors meld together.
  • This stew can be easily customized by adding other seasonal vegetables such as eggplant or potatoes.

Serving advice
