Preparation
-
1.In a large mixing bowl, combine the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
-
2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
-
3.In a separate bowl, combine the grated cheddar cheese, cream cheese, coconut milk, chopped green onions, garlic powder, black pepper, paprika, and cumin. Mix well until all the ingredients are evenly incorporated.
-
4.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
-
5.On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch. Use a round cookie cutter or a glass to cut out circles of dough.
-
6.Place a spoonful of the cheese filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.
-
7.Arrange the empanadas on the prepared baking sheet and brush the tops with vegetable oil.
-
8.Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
-
9.Remove from the oven and let them cool for a few minutes before serving.
Treat your ingredients with care...

- Experiment with different types of cheese, such as pepper jack or mozzarella, for a unique twist.
- Serve the empanadas with a side of Guamanian hot sauce or salsa for extra flavor.
- If you prefer a lighter crust, you can brush the empanadas with beaten egg instead of vegetable oil before baking.
