Ingredients

Chukchi-style stuffed dumplings differ from the original Mongolian buuz in several ways. Firstly, the filling of the Chukchi version often includes reindeer meat, which adds a unique and gamey flavor. Additionally, Chukchi cuisine incorporates Arctic herbs and spices, such as crowberry leaves and Arctic thyme, to enhance the taste profile. The cooking techniques also vary, with Chukchi-style dumplings being predominantly steamed or boiled rather than being baked or fried. We alse have the original recipe for Buuz, so you can check it out.

Preparation

  1. 1.
In a large mixing bowl, combine the flour and water. Knead until a smooth dough forms. Cover and let it rest for 30 minutes.

In a separate bowl, mix together the minced reindeer meat, chopped onion, minced garlic, crowberry leaves, Arctic thyme, salt, and black pepper.
  3. 3.
Roll out the dough on a floured surface until it is about 2mm thick. Cut out circles with a diameter of approximately 8cm (3 inches).
