Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the lamb cubes and cook until browned on all sides. Remove the lamb from the pot and set aside.

2.In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and grated ginger, and cook for another minute.

3.Return the lamb to the pot and add the cumin powder, paprika, and chili flakes. Stir well to coat the lamb with the spices.

4.Add the sliced carrots and diced bell pepper to the pot. Pour in the beef broth and soy sauce. Season with salt and pepper to taste.

5.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.

6.If desired, mix the cornstarch with a little water to make a slurry and add it to the stew to thicken the sauce. Cook for an additional 5 minutes.
