1.Heat the vegetable oil in a large saucepan over medium heat.

3.Add the diced tomatoes, brown sugar, cinnamon stick, cloves, grated ginger, and a pinch of salt to the pan. Stir well to combine.

4.Reduce the heat to low and let the mixture simmer for about 1 hour, stirring occasionally, until the tomatoes have caramelized and the chutney has thickened.

5.Remove the cinnamon stick and cloves from the chutney.
