Ingredients
In this Mauritian adaptation of the Peruvian carapulcra, we incorporate Mauritian spices and flavors to create a unique fusion dish. The original carapulcra is traditionally made with dried potatoes, pork, and Peruvian spices like aji panca and cumin. In this Mauritian version, we use fresh potatoes and replace the Peruvian spices with a blend of Mauritian spices such as turmeric, coriander, cumin, and cloves. Preparation

1.Heat the vegetable oil in a large pot over medium heat.

2.Add the chopped onion and minced garlic to the pot and sauté until they turn golden brown.

3.Add the turmeric, ground coriander, ground cumin, and ground cloves to the pot. Stir well to coat the onions and garlic with the spices.

4.Add the diced tomatoes to the pot and cook until they soften.

5.Add the cubed potatoes to the pot and stir to combine with the spices and tomatoes.

6.Pour in the vegetable broth and season with salt and pepper to taste.

7.Bring the stew to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the potatoes are tender and the flavors have melded together.
