Ingredients
In this Mauritian adaptation of the Peruvian carapulcra, we incorporate Mauritian spices and flavors to create a unique fusion dish. The original carapulcra is traditionally made with dried potatoes, pork, and Peruvian spices like aji panca and cumin. In this Mauritian version, we use fresh potatoes and replace the Peruvian spices with a blend of Mauritian spices such as turmeric, coriander, cumin, and cloves. This adaptation adds a Mauritian twist to the dish while still maintaining its comforting and hearty nature. We alse have the original recipe for Carapulcra, so you can check it out.
