Preparation

1.Heat the vegetable oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown.

2.Add the minced garlic, grated ginger, and green chilies (if using) to the pan. Sauté for another minute until fragrant.

3.Stir in the tomato puree and cook for a few minutes until the oil starts to separate from the mixture.

4.Add the ground cumin, ground coriander, turmeric powder, garam masala, paprika (if using), and salt. Mix well to combine the spices with the tomato mixture.

5.Add the cooked chickpeas to the pan and stir until they are coated with the spice mixture.

6.Pour in enough water to cover the chickpeas and bring the curry to a simmer. Cover the pan and let it cook for about 15-20 minutes, allowing the flavors to meld together.

7.Remove the lid and stir in the lemon juice. Cook for an additional 5 minutes to thicken the curry slightly.
